As Gael Stenton has previously explained, the second skill has evolved naturally from the first:
“The irony is that Lagotto have become hugely successful as truffle dogs because of their skills honed as duck retrievers. They hunt like spaniels; are agile enough to climb rock faces; have the phenomenal scenting ability to smell an organism (white truffle) which grows at least 50–55cm underground; have the sheer determination to continue for hours on end, and their specially adapted nails (evolved to help them gain purchase on the rocky banks of those long ago Venetian lagoons) are the perfect tools for digging down to the truffle. But these are adapted duck retriever skills.“
